The ``Tachiuo knife'' is a product invented and loved by Yoshinori Sono of ``Tachiju-en,'' a restaurant specializing in hairtail dishes in Abeno, Osaka.
The design takes full advantage of the know-how of Mr. Sono, who specializes in hairtail cooking, and it has a 5-edge blade with just the right amount of elasticity, making it an excellent item that can be used for a wide range of purposes, from grating, to making sashimi and cutting!

If you are a cutlass fan, this is a must-have!

Since it is a so-called Western knife, it has a double-edged design. However, Mr. Sono uses his own method of sharpening the blade into an irregular single-edged blade with a ratio of 7 to 3 (if you are right-handed, the side that hits the bone when cutting three blades is 7).
